Long before we became a fixture at farmers’ markets across Chicagoland, Chef Mom was the culinary mastermind behind our family’s favorite meals. When we adopted a vegan lifestyle, she started swapping plants for animals — never sacrificing the flavors that we grew up with.
But out & about, we found ourselves searching for hearty plant-based meals on-the-go and coming up short. That’s when the Basket was born: the love child of a sexy empanada and a hot muffin. A unique and fun savory pastry that is twice as big as an empanada, has the shape of a muffin but the dough is more flaky like a croissant.
